New independently owned cafes celebrate the thriving coffee culture of Vietnam, bringing our city classic drinks as well as wildly inventive ones.

At Hello Em in Seattle’s Little Saigon, it’s bánh mì k?p (that’s pressed, panini-style) with marinated salmon, lemongrass mayo, pickled veg, fried shallot, and cilantro, along with cà phê c?t d?a — robusta espresso with coconut cream.
