Tuscan Tuna Salad

Ingredients:

  • greens of your choice

  • cucumbers, diced

  • cherry tomatoes, sliced

  • 1 can of tuna

  • red onion, sliced

  • olives, sliced

  • 1 hard boiled egg

  • salad dressing of your choice

Instructions:

  1. Combine first six ingredients in a bowl or lunch container and gently toss to mix. Top with a hard boiled egg and serve with your favorite dressing.

Salmon Black Bean Protein Bowl

Ingredients:

  • 1 can of black beans, drained

  • 1 can of salmon, drained

  • avocado, diced

  • cherry tomatoes, sliced

  • corn (canned or fresh off the cob)

  • sour cream

  • 1/2 lime

Instructions:

  1. Combine the first four ingredients in a bowl or lunch container and top with sour cream and lime juice.

White Bean Salad

Ingredients:

  • 1 can white beans

  • radish, sliced thinly

  • feta cheese, crumbled

  • cherry tomatoes, sliced

  • fresh parsley, roughly chopped

  • 1/2 lemon, juiced
