Put Rum in Your Capri Sun

Hello, fellow (‘90s) kids. Last night, as I was doing my weekly grocery run, I answered the sweet, nostalgic, siren song of a bright blue box of Capri Sun juice bags. Later, as I sipped on the sweet nectar through the tiny, bright orange straw, I was transported through time and space to the Raging Waters parking lot in San Dimas, California. When I returned, I knew one thing: This Capri Sun needed some rum.

The Capri Sun is actually a pretty perfect no-proof beverage, and drinking one as a child felt how I imagined sipping on a cocktail would feel—indulgent and celebratory. They weren’t a daily beverage option in my house (shout out to my enemy, skim milk), but we were allowed to drink them at amusement parks (we always packed a lunch to save money), during road trips and while hanging out on the beach.

But now I’m a grownup, and I can’t just ignore the fact that the flavors in Pacific Cooler are a natural pairing for Plantation Stiggins’ Fancy Pineapple rum. By combining the two into a single beverage, I am both honoring my inner child and silencing my childhood demons—a clear victory all around. It’s sweet, it’s fruity, it’s refreshing and it can be served right in the pouch. (You could also use the tiny orange straw, but it will only slow you down.)

To make this bev in a bag, you will need:

  • 3 ounces Pacific Cooler Capri Sun (or whatever flavor you favored as a child)

  • 2 ounces pineapple rum

  • 1/2 ounce lime juice

Cut the top off the Capri Sun pouch and pour 3 ounces into a cocktail shaker. (Save the rest for your next cocktail.) Add the rum and lime juice, then shake over ice until chilled. Strain back into the pouch, add enough ice to bring the liquid level to the top, garnish with a lime wedge and drink through an adult-sized straw.
